Question

Virtuous Shaykh - may Allah grant you success - there is a man who habitually reads Surah Al-Fatihah 100 times a day, and says "I like reading it this way." Is what he does correct?

There is no evidence supporting this number, and reading Surah Al-Fatihah a certain number of times daily is not legislated. Rather, what is legislated to be read on a daily basis are: Surah Al-Ikhlaas, al-Mu'awwidhatayn [Surah Al-Nas and Surah Al-Falaq], and Aayat al-Kursi. As for reading Surah Al-Fatihah daily, then this has not been reported, rather it is to be read in the Salah.
