With regards to Zakāt al-Fiṭr, should it be given out in form of grains or in form of money/currency?

The Prophet ﷺ ordered that it be given out as a Ṣā' (approximately 3 kg) of food. Therefore, one should strive to follow the example of the Prophet ﷺ.
